Custom knife designer Ken Onion created this line of super-sharp kitchen knives for Shun, a high-end brand of Japanese-made cutlery. Stunningly beautiful, the knives grab attention for both their curvaceous handles and the ripple designs on their blades, a style known as Damascus that creates tiny air pockets that help prevent food from sticking. The reason the knives are so sharp is the keen 16 degree angle of the blade, made possible because of the very hard VG-10 steel core clad in 32 layers (16 on each side) of high-carbon stainless steel. Carefully designed by Onion to be ergonomic and comfortable for chefs who are either tall or short, left- or right-handed, the handles are made of a resin and hardwood fusion, called PakkaWood, and provide excellent, tension-free control of the blades during long bouts of chopping, slicing, and paring. Covered by a lifetime warranty, Ken Onion by Shun knives should be carefully washed and dried by hand, then stored in a wooden block if possible.
